Turkish Delight Recipe from the Image (Metric Version)

Method:

  1. Soak 28 grams of gelatine in 125 mL cold water for 2 hours.

  2. Put 900 grams of sugar into a saucepan with 125 mL water, bring to a boil.

  3. Add the gelatine, a little citric acid (about 1/2 teaspoon), and any desired flavouring (e.g., rosewater, lemon, etc.).

  4. Simmer for 20 minutes, skimming off any foam or impurities.

  5. Pour the mixture onto a wet dish, and leave to set for 24 hours.

  6. Cut into squares and roll in icing sugar.
