Home-Made Yeast (Metric Version)

  • 6 large potatoes, unpeeled

  • 1 large handful of hops (~20-25 grams)

  • 60 grams flour (2 oz)

  • 60 grams sugar (2 oz)

  • 2 tablespoons brewer’s yeast (~14 grams)

  • 1 liter water (1 quart)

Instructions:

  1. Wash the potatoes and cut them into small pieces, unpeeled.

  2. Boil the potatoes and hops together in 1 liter of water.

  3. Strain the mixture through a sieve and allow to cool.

  4. Mix in the flour, sugar, and brewer’s yeast.

  5. Cover the basin and leave for 24 hours.
