Home-Made Yeast (Metric Version)

6 large potatoes, unpeeled

1 large handful of hops (~20-25 grams)

60 grams flour (2 oz)

60 grams sugar (2 oz)

2 tablespoons brewer’s yeast (~14 grams)

1 liter water (1 quart)
Instructions:

Wash the potatoes and cut them into small pieces, unpeeled.

Boil the potatoes and hops together in 1 liter of water.

Strain the mixture through a sieve and allow to cool.

Mix in the flour, sugar, and brewer’s yeast.

Cover the basin and leave for 24 hours.
