Economical Cheesecakes (Metric Version)

  1. Turn 1 liter of milk to curds (milk that has gone sour works just as well). Break it up and drain off the whey.

  2. Mix with 55 grams of butter, and stir until perfectly smooth.

  3. Add 285 milliliters of sweet milk, and sweeten to taste.

  4. Add:

    • A pinch of nutmeg

    • 30 grams of currants

    • A few drops of lemon essence

  5. Stir all together thoroughly.

  6. Line patty pans with pastry crust and fill them with the mixture.

  7. Bake until they are a light brown.
