Sandwich Cake recipe converted to metric measurements:

Ingredients (Metric):
  • 113 g flour (quarter of a pound)

  • 113 g sugar

  • 1 large egg

  • Pinch of salt

  • 5 ml (1 teaspoon) baking powder

  • 15 g butter (about the size of a walnut)

  • A little milk (as needed)

Method:
  1. Rub the butter into the flour.

  2. Add sugar, salt, and baking powder.

  3. Beat the egg and pour it over the flour mixture.

  4. Mix well, adding a little milk if necessary to thin the batter.

  5. Pour into a greased tin.

  6. Bake in a moderate oven (about 20 to 25 minutes at 180°C (350°F).

  7. When cold, split open and spread with jam.
