Lemon Buns recipe converted to metric:

Ingredients:
  • 450 g flour

  • 2 teaspoons baking powder

  • 170 g butter and lard mixed

  • Grated rind and juice of 1 lemon

  • 170 g caster sugar

  • 1 egg

  • A little milk (approx. 2–3 tablespoons as needed)

Instructions:
  1. Rub the butter and lard into the flour.

  2. Add the baking powder, lemon rind, lemon juice, and sugar.

  3. Mix with the egg and a little milk to form a soft dough.

  4. Shape into small buns.

  5. Bake in a hot oven (around 220°C / 425°F) for 15 minutes.

  6. Buns need to cook fast or they will not rise well.
