Ingredients:
  • 225g flour (½ lb)

  • 115g butter (4 oz)

  • 115g fine sugar (4 oz)

  • 2 eggs

  • 225g currants (½ lb)

  • 142ml milk (1 gill)

  • 1.25ml bicarbonate of soda (¼ teaspoon)

  • 15ml vinegar (1 tablespoon)

Instructions:
  1. Beat butter and sugar to a cream.

  2. Beat in the eggs, one at a time.

  3. Add flour and currants, then milk, bicarbonate of soda, and vinegar.

  4. Mix quickly, put into a lined tin.

  5. Bake in a moderately hot oven (~180°C) for one hour.
