Bride’s Cake with metric measurements

265 g sugar (1 1/4 cups)

170 g butter (3/4 cup)

Cream together, then add:

8 egg whites, well beaten

120 ml sweet milk (1/2 cup)

315 g sifted flour (2 1/2 cups)

1 tsp cream of tartar

Add cream of tartar to egg whites when half-beaten.

1/2 tsp baking soda (about 2.5 g) mixed into the flour

Sift the flour mixture three times.
Instructions:

Beat everything together hard.

Do not grease or paper the pan.

Invert when taken from the oven and leave until cool.
