The Queen is very fond of a soup made after the following recipe:

  • Take 225 grams of Frankfort pearl barley.

  • Set it in a stewpan with 1.7 litres of veal stock (or bouillon stock)

  • Simmer very gently for 1.5 hours.

  • Remove one-third to another pot, rub the rest through a sieve, and return it to the whole barley.

  • Add 285 millilitres of cream.

  • Season with a little salt.

  • Stir till hot, and serve.

    The recipe is given by one of the chefs of the Royal kitchens from Queen Victoria.
