Potato Scones (Metric Version)
Ingredients:

2 eggs
-
57g butter
-
900g flour
-
Pinch of salt
-
57g sugar
-
6 or 7 small potatoes (about 400-500g before mashing)

240ml milk
-
2 teaspoons baking powder
Instructions:

Beat the butter with the sugar.

Add the eggs and beat again.

Mash the cooked potatoes and add them along with the milk.

Mix in the flour, baking powder, and salt to form a stiff dough.

Roll out the dough and cut into shapes.

Bake in a hot oven (around 220°C / 425°F) until golden.
