Coconut Biscuits (Metric Version)


Ingredients:
  • Whites of 2 eggs

  • 225g caster sugar (half a pound)

  • 225g desiccated coconut (half a pound)

Instructions:
  1. Beat the whites of two eggs until stiff peaks form.

  2. In a separate bowl, mix together the caster sugar and desiccated coconut.

  3. Gently stir this mixture into the beaten egg whites.

  4. Form small cones from the mixture.

  5. Place the cones on a buttered baking tray.

  6. Bake in a hot oven (around 200°C / 392°F) for 30 minutes.
