Potato Balls (Metric Conversion)

  1. Take 6 potatoes, boil them, pass them through a sieve, and work them into a bowl.

  2. Add:

    • 120 ml cream (1 gill)

    • 3 egg yolks

    • Pepper, salt, and nutmeg to taste

    • Finely chopped parsley

  3. Mix well until smooth. Take the mixture by tablespoonfuls, roll each into a ball, flatten slightly, and lightly flour them.

  4. In a sauté pan with plenty of melted butter, cook the potato balls slowly.

  5. Turn them when one side is done and serve hot as soon as both sides are colored.
