Potato Balls (Metric Conversion)

Take 6 potatoes, boil them, pass them through a sieve, and work them into a bowl.

Add:

120 ml cream (1 gill)

3 egg yolks

Pepper, salt, and nutmeg to taste

Finely chopped parsley

Mix well until smooth. Take the mixture by tablespoonfuls, roll each into a ball, flatten slightly, and lightly flour them.

In a sauté pan with plenty of melted butter, cook the potato balls slowly.

Turn them when one side is done and serve hot as soon as both sides are colored.
