Madeira Cake recipe converted to metric
Ingredients:

225g flour
-
115g butter
-
115g caster sugar
-
30g citron peel
-
Juice of half a lemon
-
3 eggs
Instructions:

Beat the butter and sugar to a cream with a wooden spoon.

Add the lemon juice and citron peel.

Stir in the flour.

Separate the eggs: beat the yolks and add to the mixture, stirring thoroughly.

Whisk the egg whites to stiff peaks and fold into the mixture.

Pour into a baking tin lined with greased baking paper.

Place strips of peel on top.

Bake at ~160°C (320°F) for 1.5 hours.
