Colcannon (Metric Version)

Ingredients

500g potatoes
-
300g cabbage
-
30g butter
-
Salt and pepper to taste

Instructions

Boil the potatoes and cabbage separately.

Mash the potatoes.

Squeeze the cooked cabbage dry in a clean cloth, then chop finely.

Mix the mashed potatoes and chopped cabbage thoroughly.

Season with salt, pepper, and butter.

Turn the mixture into a buttered mould (or baking dish).

Brown in a hot oven (~200°C) until the top is golden.
