Colcannon (Metric Version)

  1. Ingredients

    • 500g potatoes

    • 300g cabbage

    • 30g butter

    • Salt and pepper to taste

  2. Instructions

    1. Boil the potatoes and cabbage separately.

    2. Mash the potatoes.

    3. Squeeze the cooked cabbage dry in a clean cloth, then chop finely.

    4. Mix the mashed potatoes and chopped cabbage thoroughly.

    5. Season with salt, pepper, and butter.

    6. Turn the mixture into a buttered mould (or baking dish).

    7. Brown in a hot oven (~200°C) until the top is golden.
